
CRÈME BRULÉE: SUMMER EDITION

Ingredients
375g whipping (heavy) cream
5 egg yolks
90g sugar
1 vanilla bean
Brown sugar for each topping
Method
- Heat the oven to 300 °C degrees. In a pot, combine the whipping cream with the vanilla bean.
- In a bowl, mix the eggs and sugar
- Wait until it’s quite hot and add the mixture of eggs and sugar.
- Blend all together and then discard the vanilla bean.
- Pour into ramekins and place them in a baking dish.
- Fill dish with water halfway up.
- Preheat the oven to 160 °C degrees and bake for 20 minutes.
- Let them cool completely and refrigerate for hours up to a couple of days.
- When ready to serve, top each one of the servings with a teaspoon of brown sugar in a thin layer. Heat about 5 minutes until the sugar melts and browns.
Serve as soon as possible or within two hours or else the top will lose its crispiness
Extra tip: can be served with mango sorbet and decorated with fruit berries.
