LAMB WITH GRILLED VEGETABLES IN MUSTARD

Ingredients
For the lamb
0.25g of lamb (per person)
4 tsp. mustard ancienne mustard
Salt flakes-freshly ground pepper
Olive oil
Rosemary
For the grilled vegetables
2 cherry tomatoes
2 zucchini medium (sliced)
1 pc. eggplant (in slices)
8 pcs. pleading
Olive oil
Thymus
Salt flakes-freshly ground pepper
Balsamic vinegar
For the sauce
Mustard ancienne
Honey Lemon juice
Olive oil
Salts of salt and freshly ground pepper
For the creamy herb crust for lamb
Bread crumbs (panko)
Parsley (finely chopped leaves only)
Thyme
Rosemary
Garlic chopped
Salty flakes
Freshly ground pepper
Method
For the lamb marinade
1. Clean the lamb and remove the nerves and fats (leave the whole frame, 4 sticks per person)
2. Marinate the lamb frame with mustard, olive oil and rosemary for 12 hours in the refrigerator to marinate
3. Grill the lamb and finish it in the oven if necessary
4. Cut the lamb frame at the last moment in the middle just before serving
For the grilled vegetables
Marinate the vegetables with olive oil, thyme, vinegar, balsamic vinegar, salt, pepper, and place them on the grill.
For the herbs crust
Put all the ingredients in a blender and mix until it becomes powdery.
